Here are some ways to use mint, which is so healthy and so plentiful in the summer.
- Chop up a few fresh leaves and add to summer fruit salad. Here are a few combo ideas: cantaloupe, cherries, green grapes / strawberries, blueberries, honeydew melon / strawberries, peaches, green grapes / honeydew and cantaoupe melons, cherries / mangoes, blueberries, raspberries. It’s also nice to add some dried or fresh grated coconut
- Add to a marinated cucumber salad. Cut up your cucumbers. Add salt and pepper, olive oil, wine vinegar, mint leaves, and cut scallions if desired.
- Chop up a few leaves and add to a tossed salad.
- Chop up a few leaves and add to your vinaigrette dressing.
- Add a couple of leaves to your smoothie.
- Chop up a few leaves and add to yogurt and berries.
- Put washed leaves in water in a glass jar. Put out in the sun for a few hours and voila — tasty sun tea.
- Put in a mug with hot water to make hot mint tea.
- Make popsicles with watermelon and mint.
- Add a few leaves to your water and sip during the day.
